This can also be described as "Ofada Sauce" because it is served with Ofada rice typically at parties in South West Nigeria. Some also refer to it as Designer Stew. The hallmark of the recipe is palm oil and iru.

Ingredients
  

  • 5 Red Bell Peppers
  • 10 Scotch Bonnet Peppers
  • 2 Red Onions
  • 2 cups Palm Oil
  • 1/4 cup Iru (Locust Beans)
  • 1/4 cup Crayfish and Shrimp Powder
  • 3 tbsp Stock Seasoning
  • 1 tsp Pepper flakes
  • 2 lbs Cooked, Boneless, Goat Meat Make sure it is bite-size

Instructions
 

  • Roughly blend all the peppers in a food processor
  • Chop the red onions and add to heated palm oil
  • When the onion is tender, add blended pepper. Fry pepper on medium heat for 20 minutes, stirring occasionally
  • Add pepper flakes, stock cubes, iru, and shrimp and crayfish powder. Stir, then add cooked goat meat
  • Cook on medium heat for 15 minutes, stirring occasionally. When the mix becomes a deep red color and the oil floats to the top, your sauce is ready
  • It is best served with rice; I love mine with rice and beans cooked together
