Renny's Burrito Bowl

Thanks to my love of Mexican burrito bowls, we have this recipe. I always make sure I have this combination at home to resist the urge to order in. You get vegetables, fiber, and protein in one dish.

Servings: 4 people

Ingredients
  

  • 4 Chicken legs
  • 1 cup White Vinegar for washing the chicken
  • 2 cups Grape tomatoes
  • 1 Red onion
  • 1/2 cup Chopped cilantro
  • Salt
  • 2 tbsps Olive oil
  • 1 can Black beans
  • 3 cups Cooked white rice I boiled mine with oil, salt, and fresh cilantro. topped it off with fresh lime juice
  • 2 Limes
  • 1/4 cup Balsamic vinegar
  • 3 tbsps Seasoned Salt of choice you can use chicken stock cubes
  • 2 tbsps Cameroon Pepper very optional

Method
 

  1. Submerge the chicken in water and add vinegar. Remove the skin and pat dry
  2. Massage a combination of balsamic vinegar, oil, seasoned salt, Cameroon pepper, and a handful of chopped cilantro into chicken. Cover with cling film and let marinate for 15 minutes
  3. Pre-heat air fryer to 400 degrees. Add marinated chicken to air fryer and cook for 24 minutes, flipping at the 12-minute mark. Done
  4. For pico de gallo, chop grape tomatoes and red onion, add chopped cilantro, squeeze juices out of two limes, add a pinch of salt, and combine.
  5. Add canned black beans to a pot. Heat until hot and add a pinch of salt.
  6. In a bowl, add your cooked rice, black beans, pico de gallo, and chicken. THE END
